1 -1/4 cups cake flour, sifted
1-1/2 cups sugar, divided
1/2 teaspoon salt
6 egg yolks
1/4 cup water
1 cup egg whites (6-8 large eggs)
1 teaspoon cream of tartar
1 teaspoon vanilla extract
1 tablespoon fresh lemon juice
1 teaspoon grated lemon zest
1 tablespoon baking soda, sifted
1/4 cup strong brewed coffee (I recommend espresso)
1-1/2 cups sugar
1/4 cup light corn syrup
2 cups heavy cream
2 tablespoons sugar
2 teaspoons vanilla extract
2 teaspoons coffee granules
Let’s start baking
Preheat the oven to 350°F. Sift flour, 3/4 cup sugar, and salt onto a sheet of wax paper and keep it aside Beat the egg yolks and ¼ cup sugar until thick and yellow with an electric beater. Add some water and beat it more till it becomes thicker, for about 3-4 minutes.
Whisk the egg whites with the cream of tartar. Whisk it till it becomes soft. Add half the sugar and whisk until it’s glossy. Mix vanilla, lemon juice, and lemon zest & Pour yolk mixture over whites. Fold the mixture together gently with a rubber/wooden spatula. Sprinkle the flour mixture over the egg mixture; fold to combine and repeat it till mixed properly.
Slowly pour batter into an ungreased 10-inch round tube pan with a removable bottom or any regular tin. Use the spatula to make the mixture on a level.
Bake the cake for 55 minutes
Combine coffee, sugar and corn syrup and place it over the flame, Stir the mixture till sugar dissolves When the mixture becomes clear and begins to boil, rise up the heat to medium-high; stir until mixture reaches 290°F on a candy thermometer.
After cooking it add baking soda and pour it out on the baking sheet. Let it cool for an hour.
Crush them into small pieces and store them in a container.
Merge the thick cream, coffee, vanilla & sugar and mix it until it gives a creamy and thick texture.
Stacking the cake
Slice the cake into 3 equal layers using a knife. Spread the whipped cream between each layer, carefully assemble layers. Cover the sides and the left over cake with remaining cream.
