Thanksgiving Day is a national holiday celebrated primarily in the USA and Canada as a mark of thanks for the harvest and the preceding year. It is observed on the fourth Thursday of November in the US. It is a largely secular celebration.

Some of the traditional cake recipes to feature in thanksgiving dinner are as follows:

•             Carrot cake:

Ingredients: 2 cups all purpose flour, 2 tsp baking soda, ½ tsp salt, 2 tsp ground cinnamon, 3 large eggs, 2 cups sugar, ¾ cup vegetable oil, ¾ cup buttermilk, 2 tsp vanilla extract, 2 cups grated carrot, 1 can crushed pineapple, 1 can flaked coconut,1 cup chopped walnut. Buttermilk glaze: 1 cup sugar 1 ½ tsp baking soda, ½ cup buttermilk, 1 tbsp light corn syrup, 1 tsp vanilla extract.

Line 9 inch round cake pans with wax paper. Lightly grease and flour wax paper. Set aside pans. Stir together first four ingredients. In another bowl, beat eggs and next four ingredients with an electric beater till smooth. Add flour mixture, beating gently till blended. Fold in carrot and next three ingredients. Pour batter into prepared pans. Bake at 350 degrees for 25 -30 minutes. For buttermilk glaze, bring first five ingredients to a boil in a large Dutch oven. Boil and stir for 4 minutes and then remove from heat and stir in vanilla. Drizzle buttermilk glaze evenly over layers. Cool the cake on wire racks.

•             Pumpkin cake:

Ingredients: 2 cups white sugar, 1 ¼ cup vegetable oil, 1 tsp vanilla extract, 2 cups canned pumpkin, 4 eggs, 2 cups all purpose flour, 3 tsp baking powder, 2 tsp baking soda, ¼ tsp salt, 2 tsp ground cinnamon, 1 cup chopped walnut.

Method: Preheat oven to 350 degree F. Grease and flour a 12 x 18 inch pan. Sift together baking powder, flour, baking soda, salt and cinnamon. Set aside. In a large bowl, combine sugar and oil. Blend in vanilla and pumpkin and beat in eggs one at a time. Gradually beat in flour mixture. Stir in nuts. Spread batter into 12 inch x 18 inch pan. Bake in preheated oven for 30 minutes. Allow to cool.

•             Apple harvest pound cake with caramel glaze:

Ingredients: 2 cups white sugar, 1 ½ cup vegetable oil, 2 tsp vanilla extract, 3 eggs, 3 cups all purpose flour,1 tsp baking soda, ½ tsp ground cinnamon, 1 tsp salt, 2 medium apples, peeled and chopped, 1 cup chopped walnuts, ½ cup butter, 2 tsp milk, ½ cup brown sugar.

Method: Preheat oven to 350 Degree F. Grease a 9 inch Bundt pan. In a large bowl, beat in eggs, oil, sugar, and vanilla till light and fluffy. Combine flour, baking soda, cinnamon and salt. Stir into batter till blended. Fold in apples and walnuts using a spoon. Pour into prepared pan. Bake for 1 hour and 20 minutes in preheated oven till done. Check by inserting a toothpick inside cake. It should come out clean when taken out. Allow to cool and invert on a wire rack. Make glaze by heating butter, milk and brown sugar in a small saucepan over low heat. Bring to a boil, and keep stirring in order to dissolve the sugar and then remove from heat. Drizzle over warm cake and serve.
